Despite being one of the most popular comfort foods, pasta is not always the healthiest option. You might think you have to give up pasta completely if you are on the ketogenic diet. But don't worry! You can make a delicious and nutritious pasta dish that won't break your diet with our Keto Pesto Chicken Pasta recipe. We'll share our recipe and show you how to make this flavorful and filling meal in this blog post.
Ingredients:
8 oz. 2 tablespoons olive oil, keto-friendly pasta, such as zucchini or shirataki noodles; 4 sliced chicken breasts; 1/2 cup pesto; 1/4 cup grated Parmesan cheese; salt and pepper to taste.
The pasta should be cooked as directed on the package. Instead of boiling the zucchini noodles, you can sauté them in a pan for a few minutes.
Olive oil can be heated in a large pan over medium-high heat while the pasta is cooking. Season with salt and pepper before adding the sliced chicken. The chicken should be cooked through and browned after 5 to 7 minutes.
Stir the pesto into the chicken in the pan to combine. Cook the pesto until it is heated through, about two to three minutes.
Drain the pasta and add it to the pan with the chicken and pesto after it has finished cooking. Sprinkle with grated Parmesan after tossing to combine.
Serve and have fun!
Variations and Tips:
Any keto-friendly pasta you like can be used, including spaghetti squash, shirataki noodles, and zucchini noodles.
You can use a pesto that does not contain dairy and leave out the Parmesan cheese to make this dish dairy-free.
